Cinnamon is a lovely spice made from the bark of evergreen trees. The inner bark of the trees are dried until they are curled into rolls which are the cinnamon sticks. DIFFERENCE between Ceylon and cassia- Ceylon cinnamon sticks are thinner, multilayered as compared to Cassia. Since the barks of Ceylon cinnamon are thin, they are difficult to harvest as compared to the rest. But all of it is worth it as this cinnamon is loaded with benefits.
